Roasted Root side dish tonight.  I make this several times a week and never get sick of it.  Various root veggies tossed in olive oil and sprinkled with fresh parsley and roasted.
Roast in 400 degree oven until veggies are cooked to your liking.
Rutabaga
White Turnip
Radishes
Sweet Potato
Carrots
Celery
Whole Garlic Cloves
Olivia Oil
Chopped Fresh Parsley

Made these last night for appetizer.  Don’t usually indulge in bacon, but it was well worth it.  These were amazing!  I will be making more of these over the holidays.
